What you pay, and when

  • Now — $250 deposit, direct to Dave at Ridgeline (Venmo or a cheque). Never to the middleman: they handle no money.
  • Around Oct 15, once the carcass is weighed, you get the exact balance with the arithmetic shown. Estimate: $1,400–1,500 total, so roughly $1,150–1,250 still to pay — direct to Dave, before you collect.

Your only homework

  • The locker's cut sheet — how you want it butchered. It comes this week and is due back by Oct 11. First-timers fill it in over a fifteen-minute phone call.
  • Clear about 3.5 cubic feet of freezer. It all arrives at once.
Why your legal name was required: before the kill date, every owner's name goes on the ownership manifest the locker files. That's what makes four households splitting one animal legal — you own part of the animal, not a box of meat.
